Non-Backwater „Plate” of Polish Magnates at the End of Seventeenth Century
The aim of this paper is to look closer at old Polish cuisine from the perspective of the phenomena and processes of global character. Basing on the analysis of the content of two recipes to be found in Polish cooking books from the end of the seventeenth century, the abundance of exotic ingredients that were used in magnate cuisine is presented. The ingredients became a pretext to demonstrate the global relations in which the Polish Commonwealth culinary craft was entangled.
